Welcome to the delicious world of cheese pies! This recipe for salty cheese pie is perfect for any occasion and stands out for its simplicity and flavor. With a flaky crust and a rich filling, you'll surely impress family and friends. Let's get started!
#### Ingredients
For the dough:
- 2 egg yolks
- 400 g of good quality flour (preferably type 00 for a fine texture)
- 100 ml of sparkling mineral water (choose a carbonated water for a fluffier texture)
- 125 ml of full-fat yogurt (you can also use Greek yogurt for a more intense flavor)
- A pinch of salt
For packaging:
- 175 g of butter (make sure it's at room temperature for easy mixing)
- 30 g of flour (to add to the butter mixture)
For the filling:
- 500 g of salty cheese (preferably telemea cheese or cottage cheese)
- 500 g of sweet ricotta
- 5 eggs (make sure they are fresh for better taste)
- 1 bunch of fresh dill (or dried dill, depending on your preference)
#### Instructions
1. Preparing the dough:
In a large bowl, combine the egg yolks, sparkling water, yogurt, and salt. Mix well until smooth. Gradually add the flour and knead until you have a smooth and elastic dough. This is the secret to a perfect pie, so don't rush!
2. Preparing the butter:
In another bowl, mix the butter with the flour until you obtain a homogeneous mixture. This will be used to create delicious layers in the dough.
3. Forming the sheets:
Divide the dough into two equal parts and place them on an oiled surface. Roll out the first part into a square sheet of medium thickness. Evenly spread the butter mixture over the entire surface, then make cuts in the dough in the shape of a cross.
4. Folding the dough:
Fold the corners of the sheet as follows: first the bottom left, then the top right, followed by the top left and bottom right corner. You will get a square. Place each wrapped piece of dough on a tray, with the folds facing down, cover with foil, and let them chill in the fridge for 15 minutes.
5. Repeating the process:
Take the dough out of the fridge and place it with the folds facing up on the oiled surface. Lightly oil the surface and roll it out again into a square. Make cuts again and fold according to the previous instructions. Let it chill in the fridge for another 30 minutes.
6. Preparing the filling:
Meanwhile, mix the salty cheese, ricotta, eggs, and dill in a large bowl. Taste the mixture to ensure it is well seasoned.
7. Assembling the pie:
After the dough has chilled, roll it out again, cut it into the desired shape (square or rectangular), and place it on a baking tray lined with parchment paper. Make a few holes with a fork to prevent puffing. Add the cheese filling, then place the second sheet on top. If desired, you can cut it into shapes as preferred.
8. Baking:
Brush the pie with an egg yolk for a golden and appetizing crust. Bake in a preheated oven at 180°C for about 40 minutes or until golden and crispy.
#### Serving suggestions:
This salty cheese pie is delicious warm, but can also be enjoyed cold. You can serve it alongside a fresh salad or with plain yogurt for a perfect contrast. If you want to add a touch of originality, try adding a few slices of apple to the filling for a sweet-sour taste.
#### Variations:
For a more flavorful pie, you can add olives, bell peppers, or sautéed onions to the filling. You can also experiment with other types of cheese, such as feta or mozzarella.
Enjoy this simple and quick recipe, and your salty cheese pie will surely be a hit at any meal!
