Breaded Zucchini
Zucchini are versatile and healthy vegetables, and preparing them in a simple yet delicious way can transform an ordinary meal into an unforgettable culinary experience. Start by peeling the zucchinis, ensuring that you remove all impurities. Once peeled, wash them well under a stream of cold water, then slice them thinly, about 5 mm thick. This thickness will allow the zucchinis to cook evenly and become crispy.
After you have finished slicing the zucchinis, sprinkle them with a little salt and let them sit for 10-15 minutes. This step is essential, as the salt will help draw out excess water from the zucchinis, contributing to a crispier texture after frying. While you wait, you can prepare the eggs. Crack 2-3 eggs into a bowl and beat them well with a whisk or fork. Add a pinch of salt to enhance the flavor and mix until you achieve a homogeneous mixture.
On a flat plate, place a small amount of flour. This step will help form a delicious crust on the zucchinis. Take each slice of zucchini, dredge it in flour, ensuring it is evenly coated, then dip it into the beaten egg, allowing the excess to drain off. Repeat this process for all the zucchini slices.
In a non-stick pan, add enough oil to cover the bottom of the pan. Heat the oil over medium heat. When the oil is hot (you can check this by sprinkling a drop of water into the pan – if it sizzles, it’s time to start), add the zucchini slices to the hot oil, being careful not to overcrowd them. Fry them for 2-3 minutes on each side or until they become golden and crispy.
