Breaded Zucchini
To prepare delicious zucchini slices in batter, we start by gathering all the necessary ingredients. We will need 2 medium zucchinis, 2 eggs, 200 g of flour, 250 ml of milk, a teaspoon of baking powder, salt and pepper to taste, and oil for frying. Make sure you have a paper towel on hand to absorb the excess oil after frying.
We begin by peeling the zucchinis. Using a sharp knife, we cut the zucchinis into thin slices, about 5 mm thick. These slices should be uniform to cook evenly. Once we finish cutting, we set the zucchini slices aside and turn our attention to preparing the batter.
For the batter, in a large bowl, we crack the two eggs and beat them well with a whisk or fork until frothy. Then, we add the milk and continue mixing. It's time to start incorporating the flour gradually, mixing constantly to avoid lumps. We also add the baking powder, which will help the batter become fluffy and airy. Finally, we season with salt and pepper to taste.
Once the batter is homogeneous and has the consistency of thicker sour cream, we prepare to fry the zucchini slices. In a deep pan, we heat the oil over medium heat. It is important that the oil is well heated so that the zucchini slices get a golden and crispy crust.
We take each zucchini slice and dip it in the batter, making sure it is well coated on all sides. Then, we carefully place it in the pan, being careful not to overcrowd the pan to allow each slice to fry evenly.
We fry the zucchini slices for about 3-4 minutes on each side until they become golden and crispy. Once they are ready, we remove them from the pan and place them on a paper towel, which will absorb the excess oil.
These battered zucchini slices are delicious both warm and cold, and can be served as an appetizer or side dish. Enjoy your meal!
