Preparation: We start by cleaning the potatoes, making sure to wash them well under running water to remove any impurities left on the surface. After cleaning them, we cut them into slices about 0.5 cm thick to ensure they cook evenly. Then, we take a deeper baking tray and add 3 tablespoons of lard or, alternatively, about 150 ml of oil. It is important to have a fatty base that will help cook the potatoes and infuse the flavors.

We arrange the potato slices in the prepared tray, taking care to distribute them evenly. The amount of potatoes may vary depending on the size of the tray and how many chicken wings we want to use. Next, we take care of the chicken wings. They need to be cleaned well, washed under cold water, and dried with a paper towel. We generously season them with salt, making sure each wing is well coated.

After seasoning the wings, we carefully place them on top of the potatoes in the tray. Now it's time to prepare the garlic sauce. We take 3 cloves of garlic and crush them well together with 1 teaspoon of salt, using a mortar or a crusher. After obtaining a smooth paste, we add a little oil and rub the mixture until it starts to foam, thus releasing the intense flavors of the garlic. Finally, we add about 100 ml of water to obtain a fluid garlic sauce, which we generously drizzle over the wings.

To enhance the flavor of the dish, we sprinkle a little marjoram over the meat and pour 50 ml of semi-dry white wine (if the tray is larger, we can use 100 ml). We also add about 200 ml of water over the meat and potatoes. We then cover the tray with aluminum foil to retain moisture and allow the ingredients to cook slowly.

We place the tray in the preheated oven at 180 degrees Celsius and let it bake for 20 minutes. After this period, we remove the aluminum foil and continue baking until the meat becomes golden and crispy, and the potatoes acquire a golden and appetizing texture.

For those who want to enhance the flavor of the roast, it is recommended to serve with extra garlic sauce, which will add a note of freshness and intensity to the dish. Additionally, a green salad or a side of grilled vegetables can perfectly complement this delicious meal. Bon appétit!
