Ingredients
- 1 large chicken breast
- 1 pickled cucumber
- 1 carrot
- A few bell peppers (preferably roasted)
- 3 eggs (for the omelette)
- 1 tablespoon of classic mustard
- 100 g of bacon (or pancetta)
- Spices: 1 teaspoon of curry, 1 teaspoon of sweet paprika, pepper to taste
- Olive oil
- 1-2 tablespoons of butter
- Remaining juice from the roasted peppers (ideally frozen with the juice)
- Fresh herbs (dill, parsley, green onions)
Preparation
1. Preparing the chicken breast:
- Spread a plastic wrap on a flat surface. Place the chicken breast on the wrap and cover it with another wrap. Use a meat mallet or rolling pin to pound the chicken breast evenly, being careful not to tear it. The goal is to achieve an even thickness that will allow for uniform cooking.
2. Seasoning:
- In a small bowl, mix curry, sweet paprika, pepper, and a drizzle of olive oil. Using a brush, coat the outside of the chicken breast with this mixture.
- On the inside, spread a thin layer of mustard. This will not only add flavor but also help retain moisture.
3. Preparing the filling:
- Beat the 3 eggs in a bowl, add chopped dill, cheese (e.g., feta or telemea), olives, chopped green onions, and season with salt and pepper. Prepare the omelette in a non-stick pan, then set it aside to cool slightly.
- Cut the roasted peppers into strips, the cucumber into cubes, and the carrot into small cubes. Add these vegetables to the omelette filling.
4. Stuffing and rolling:
- Place the omelette filling on the chicken breast, making sure to distribute it evenly. Add the slices of bacon and the cut carrot.
