To prepare these delicious snacks, we start by making a dough similar to that used in the Wassa bread recipe. In a large bowl, we combine 500 grams of whole wheat flour, one teaspoon of salt, one tablespoon of sugar, and one packet of dry yeast. We mix the dry ingredients to ensure that the yeast and salt are evenly distributed. Then, we gradually add 300 ml of lukewarm water and 50 ml of olive oil, stirring with a wooden spoon until the dough starts to form.

Once we have a homogeneous dough, we knead it for about 10 minutes on a floured surface until it becomes elastic and smooth. We form a ball from the dough, cover it with a clean towel, and let it rise in a warm place for about an hour or until it doubles in size.

After the dough has risen, we take it out of the bowl and roll it out on a lightly floured surface, obtaining a thin sheet about 5 mm thick. Using a glass or a cutter, we cut small circles from the dough, which will become the base for our snacks.

In a separate bowl, we prepare the filling from the four types of cheese. We can use mozzarella cheese, feta cheese, goat cheese, and cheddar cheese, each bringing a distinct note of flavor. We cut the cheeses into small cubes and mix them together.

On each dough circle, we add a teaspoon of the cheese mixture and generously sprinkle dried oregano, which will provide a fragrant and inviting taste. We place the filled circles on a baking tray lined with parchment paper, leaving some space between them to allow for expansion during baking.

We preheat the oven to 200 degrees Celsius and place the tray with the snacks in the oven. We bake for 15-20 minutes or until the dough turns golden and crispy, and the cheese starts to melt and sizzle.

After taking them out of the oven, we let the snacks cool slightly before serving. These little delights are perfect as appetizers at a party or as snacks between meals. Enjoy your meal!
