Total time: 54 minutes
Number of servings: 2 pizzas
Necessary ingredients
For the dough:
- 400 grams whole wheat flour
- 100 grams cornmeal
- 7 grams dry yeast (1 packet)
- 325 ml warm water
- ½ tablespoon sugar
- ½ tablespoon salt
For the tomato sauce:
- ½ box passata (approximately 200 ml)
- ½ clove garlic, finely chopped
- A handful of fresh basil leaves
- Salt, to taste
- 1 teaspoon dried oregano
For the topping:
- 4 new potatoes, peeled and sliced into 1 cm rounds
- 3 sprigs of rosemary
- 1 teaspoon thyme leaves
- Salt and pepper, to taste
- Juice of ½ lemon
- Olive oil
- 50 grams mozzarella, diced
Preparation steps
Step 1: Making the dough
1. In a large bowl, mix the flour, cornmeal, and salt. Make a well in the center of the mixture.
2. In another container, combine the warm water with the yeast and sugar. Let the mixture sit for 5-10 minutes until it becomes frothy. This is a sign that the yeast is active.
3. Pour the yeast mixture into the bowl with the flour. Use your hands to mix the ingredients until you obtain a homogeneous dough.
4. Transfer the dough to a floured surface and knead it for about 10 minutes until it becomes elastic and smooth.
5. Place the dough in a clean bowl, cover it with plastic wrap and towels, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Step 2: Making the tomato sauce
1. In a blender, add the passata, garlic, basil leaves, salt, and oregano. Blend until you obtain a smooth sauce. You can adjust the spices to taste by adding more basil or garlic if desired.
Step 3: Preparing the topping
1. Slice the new potatoes into approximately 1 cm thick rounds. In a bowl, mix them with salt, pepper, olive oil, rosemary, thyme, and lemon juice. This mixture will give the potatoes a fantastic flavor.
Step 4: Assembling the pizza
1. Once the dough has risen, divide it into two equal parts. On a floured surface, roll out each part into a circle, to your desired thickness.
2. Place the dough on a preheated pizza stone or on a sheet of aluminum foil if you don't have a stone.
3. Spread the tomato sauce over the dough, leaving a little space at the edges.
4. Arrange the marinated potato slices evenly on top of the pizza, then sprinkle the mozzarella on top.
Step 5: Baking the pizza
1. Preheat the oven to 220 degrees Celsius. Make sure the pizza stone is well heated.
2. Bake each pizza for 12 minutes, or until the crust is golden and crispy.
3. Remove the pizza from the oven and let it cool for a few minutes before slicing.
