Tandoori Chicken
To prepare a delicious tandoori chicken dish, we start by cutting the chicken meat into suitable cubes that will cook evenly. These cubes will be seared in a hot pan with oil until they turn white and slightly browned. This step is essential as it will contribute to the development of the base flavors of our dish. Once the onion becomes translucent and the garlic releases its aromas, we add the three tablespoons of tandoori paste. This paste is a complex blend of spices that includes coriander, salt, lentil powder, cumin, cinnamon, turmeric, bay leaf, chili, and star anise, all contributing to an intense and aromatic flavor.
Next, we add the grated ginger, which will bring a spicy and fresh accent, mixing everything well. Once all the ingredients are homogenized, we pour in the tomato juice, which will give a rich texture and help create the sauce. We let the mixture simmer over medium heat for about 5 minutes, stirring continuously to prevent sticking. This is the ideal time to check and adjust the spices according to personal preferences.
After the sauce has started to thicken, we add the cream, which will transform the dish into a creamy and delicious sauce. Finally, we incorporate the butter, which will add an additional layer of richness and make the sauce even smoother. This mixture will coat the chicken cubes, giving them a savory glaze.
