Stuffed Potatoes
Stuffed potatoes are a delicious choice, and I invite you to discover how to prepare them perfectly. We start by preparing the potatoes. Choose medium-sized potatoes that are uniform so they will bake evenly. Wash them well under a stream of cold water to remove any impurities. After cleaning them, carefully wrap them in aluminum foil, making sure they are completely covered. Place them on a tray and put them in the preheated oven at 200 degrees Celsius for about an hour. In the meantime, you can prepare the filling.
In a bowl, beat a fresh egg and add your favorite cheese, cut into cubes, and a few slices of ham, finely chopped. Season the mixture with salt, pepper, and herbs to taste, such as oregano or basil. Then, when the potatoes are baked, take them out of the oven and let them cool for a few minutes so you can work with them without burning yourself. Using a knife, cut a lid off the top of each potato. With a teaspoon, scoop out the insides of the potatoes, being careful to leave a thin edge so they don't break. Add the scooped-out insides to the bowl with the filling you prepared earlier. Mix the ingredients well until you get a homogeneous composition.
Fill each potato with this mixture, making sure not to leave any gaps. On top, place a slice of mozzarella, which will melt and form a delicious crust. Place the stuffed potatoes back on the baking tray, covering them with aluminum foil to bake evenly. Put the tray back in the oven for 20 minutes. In the last 10 minutes, remove the foil to allow the cheese to brown nicely.
Once the potatoes are ready, serve them warm, either as a main dish or as a side for various dishes.
