Smoked sausage pilaf with tomato juice

Smoked sausage pilaf with tomato juice is a one-pot dinner, with rice cooked in chicken stock and tomato juice. The rice comes out reddish and hot, with pieces of sausage among the grains and a light lemon scent. I look for sausage with enough fat, because the base of the pilaf starts from it. Preparation: 15 minutes. Cooking: 26 minutes. Rest: 10 minutes. Total time: 51 minutes. Servings: 4. About 555 kcal and 18 g protein per serving.
Ingredients
- 2 tablespoons olive oil
- 3 tablespoons water
- 250 g smoked sausage
- 1 red onion (150 g)
- 1 white onion (150 g)
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon sweet paprika
- 1 teaspoon paella seasoning
- zest of 1/2 lemon
- 300 g tomato juice (homemade)
- 300 g rice
- 600 ml chicken stock
- 2 bay leaves
- 1 dried hot chili pepper (chopped)
- 15 g fresh parsley (chopped)
Preparation
1. In a saucepan, add 2 tablespoons of olive oil, the sausage cut into pieces, the red onion and white onion finely chopped and 3 tablespoons of water. Fry for 2-3 minutes, until the sausage releases a little fat. 2. Add 1 teaspoon of salt, 1/2 teaspoon of ground black pepper, 1 teaspoon of sweet paprika, 1 teaspoon of paella seasoning, the zest of 1/2 lemon grated on the small grater and 300 g of tomato juice. Stir well. 3. In the same pan, add the rice and toast it for 2-3 minutes, stirring. Then add 600 ml of chicken stock, 2 bay leaves and 1 dried hot chili pepper (chopped). 4. Let it simmer for 20 minutes, stirring from time to time, until the rice is cooked and the grains are soft to the bite. 5. Turn off the heat, cover the pot with the lid and leave it like that for 10 minutes. 6. Serve the pilaf sprinkled with chopped fresh parsley.
Notes
If you can't find smoked sausage, use the same amount of smoked chicken sausage. Round rice comes out stickier than long grain, so choose long grain if you want a lighter pilaf. Very fatty sausage releases a lot of liquid, so take the extra fat out of the pot before adding the rice. Serve it with a cucumber and yogurt salad. It keeps up to 3 days in the fridge in a closed container, and reheats with a splash of water. If you double the amounts, use a wider pot so the rice cooks evenly.
Frequently asked questions
What if the rice stays hard in the middle?
Add 50 ml of hot water, cook on low heat for another 5 minutes, covered, and check again.
The pilaf comes out too wet, what can I do?
Leave the pot uncovered, on very low heat, for 2-3 minutes, until the liquid at the bottom disappears.
How thick should the sausage rounds be?
About 1 cm, meaning pieces you can clearly see among the grains of rice.
Can it be made without hot chili?
Yes, leave out the dried chili and add 1/2 teaspoon of hot paprika along with the sweet paprika.
