To prepare delicious and fragrant rice, start by heating two tablespoons of oil in a pan or deep pot. Add the rice and sauté it, stirring continuously, until the grains start to take on a light golden hue. This step is essential for developing a pleasant aroma and rich flavor. When the rice turns golden, pour in dry white wine and continue to stir. Leave it over medium heat so that the wine is completely absorbed by the rice, which will add a distinct and sophisticated note to the dish.

After the wine has evaporated, add a cup of warm broth. Cover the pot with a lid and reduce the heat to low, allowing the rice to simmer for 10-15 minutes. During this time, stir occasionally to prevent sticking. The rice is ready when the liquid is completely absorbed, and the center of the grain remains slightly firm. Finally, salt to taste to highlight the flavors.

When the rice is cooked, remove the pot from the heat and cover it with plastic wrap for a few minutes. This will allow the rice to cool slightly and continue the steaming process. After it has cooled, use a fork to fluff the rice, running the tines through it to separate the grains.

In a separate pan, heat a tablespoon of oil and add turmeric. Sauté it, stirring constantly, to enhance its aroma and bring out its vibrant color. When the turmeric becomes aromatic, add half of the cooked rice and a quarter cup of warm broth. Let it simmer over low heat for a minute until the broth is completely absorbed.

After this stage, transfer the rice to a sieve and rinse it under a stream of cold water. This will remove any turmeric granules that have not dissolved completely, ensuring an even appearance and pleasant texture. Finally, combine the two types of rice – the white and the yellow – carefully mixing to maintain the integrity of the grains.
