Upside-down plum cake

Dessert - Upside-down plum cake by Lucretia M. - Recipia

Upside-down plum cake is served cold, cut into slices, with the browned fruit on top after the cake is turned out. The cake, similar to a loaf cake, bakes over halved plums and sugar, and the fruit is left on show when you turn the pan over. I choose ripe but still firm plums, so I can arrange them cut side down. Preparation: 25 minutes. Cook time: 40 minutes. Rest: 30 minutes. Total time: 95 minutes. Serves: 12. Approximately 300 kcal and 7 g protein per serving.

Ingredients

  • 15 g margarine
  • 5-6 tablespoons sugar for the pan
  • 18 plums
  • 10 eggs
  • 10 tablespoons sugar
  • 3 sachets vanilla sugar
  • 10 ml vanilla essence
  • 10 tablespoons oil
  • 9-10 tablespoons flour

Preparation

1. Heat the oven to 180°C. Line a pan about 30 × 40 cm with baking paper, grease the paper with 15 g margarine and sprinkle with 5-6 tablespoons sugar. 2. Halve the plums and arrange them in the pan, cut side down. 3. Separate the eggs. Beat the egg whites with the 10 tablespoons sugar and the vanilla sugar, then fold in the yolks and vanilla essence. 4. Add the oil, then the flour, and mix until you have a batter like one for a loaf cake. Pour it over the plums and gently level the top. 5. Bake for 40 minutes, until the cake is browned and a toothpick inserted into it comes out clean. Leave the cake in the pan for 10 minutes, turn it out onto a platter and wait until it has cooled completely before slicing.

Notes

Small plums can stay in halves, while large ones can be cut into quarters; very soft fruit releases more juice. For this amount of batter, use a pan about 30 × 40 cm so the layer does not turn out too thick. It keeps covered in the refrigerator for up to 3 days; take the slices out a little before serving. The cake is reminiscent of a loaf cake, with plums on top; it contains gluten and eggs. A slice goes well with black tea.

Frequently asked questions

Why does the cake sink after baking?

Egg whites that are not beaten enough may not support the batter well. Beat them for 4-5 minutes, until stiff peaks form when you lift the whisk.

Can I use apricots instead of plums?

Yes, arrange 18 apricot halves in the pan instead of the plums. Choose firm fruit so it keeps its shape while baking.

How do I turn out the cake without it breaking?

Choose a platter at least 5 cm wider than the pan and turn the pan over in one motion. The baking paper helps keep the fruit from sticking to the bottom.
