Chocolate caramel bars

Chocolate caramel bars have a crumbly coconut base, a dense middle and a glaze that sets as it cools. The sweetened condensed milk slowly caramelizes in a bain-marie until it turns golden brown. I watch the color of the condensed milk and let it turn golden brown; I don't stop while it's still beige. Prep: 20 minutes. Cook: 1 hour and 28 to 38 minutes. Rest: 2 hours and 30 minutes. Total time: 4 hours and 18 to 28 minutes. Servings: 16. Approximately 240 kcal and 4 g protein per serving.
Ingredients
For the caramel
- 397 g sweetened condensed milk
- 1500 ml water
For the base
- 125 g flour
- 40 g coconut flakes
- 50 g sugar
- 1/4 teaspoon salt
- 75 g butter
For the glaze
- 100 g dark chocolate
- 50 ml heavy cream
- 50 g butter
Preparation
1. Heat the oven to 180°C. Pour the sweetened condensed milk into an ovenproof dish and cover it with aluminum foil. Set the dish in a larger pan, pour 1500 ml water into the pan, up to halfway up the dish of milk, and bake for 60 minutes, until the milk turns golden brown. 2. Take the dish out of the oven and let the caramel cool for 30 minutes. 3. Mix the flour with the coconut flakes, sugar and salt. Pour in the melted butter and mix until you have crumbs. Transfer the mixture to a 20 × 20 cm springform pan, press it down firmly with a spoon and bake for 10-15 minutes at 180°C, until the edges are golden. 4. Spread the cooled caramel over the base and bake for another 15-20 minutes at 180°C, until the edges of the caramel layer have set. 5. Let the cake cool for 45 minutes. 6. Put the chocolate, heavy cream and butter in a small saucepan. Heat over low heat, stirring, until the mixture reaches boiling point, about 3 minutes. Take the saucepan off the heat, stir the glaze until smooth and let it cool for 15 minutes, until it is still fluid and glossy. 7. Pour the glaze over the cake and refrigerate for 60 minutes, until set, then cut into portions.
Notes
I cut them into small squares and serve them with unsweetened coffee; the bitter taste of the coffee keeps the sweetness in check. They keep in a sealed container in the fridge for up to 3 days; the caramel stays firmer when chilled. Fine coconut flakes mix evenly into the base, while large ones leave distinct pieces and a coarser texture. Chocolate with 55-60% cocoa makes the glaze less bitter than chocolate with a higher percentage, without changing the amount of cream. Use sweetened condensed milk, not plain evaporated milk, which stays too fluid for the caramel layer. A 20 × 20 cm springform pan keeps the layers thick; in a larger one, the base browns faster and should be checked earlier. For a gluten-free version, replace the flour with 125 g gluten-free baking mix with a binding agent. This dessert contains gluten and dairy.
Frequently asked questions
Can I use milk chocolate for the glaze?
Yes, replace the dark chocolate with 100 g milk chocolate; the glaze will be sweeter and may set less firmly.
Why does the glaze stay soft after cooling?
Leave it in the fridge for another 30 minutes. If it still doesn't set, check that you measured 50 ml cream, not more.
How do I cut the bars without cracking the glaze?
Hold the blade in hot water for 10 seconds and wipe it before each cut.
Why does the base crumble when I lift a bar?
Press the corners down firmly with the bottom of a glass before baking; loose crumbs don't support the layer above very well.
