Apple pie

Apple pie has grated apples beneath a lattice of pastry baked at 180°C. Cinnamon and cloves go into the filling, and the base stays tender after cooling. I make the strips about a finger wide so the lattice shows up nicely. Prep: 35 minutes. Cook: 40 minutes. Rest: 110 minutes. Total time: 185 minutes. Serves: 8. Ingredients
For the filling
- 1 kg apples
- 50 g sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 20 g butter
For the dough
- 75 g butter
- 5 tablespoons sugar
- 2 eggs
- 450 g flour
For dusting
- 10 g powdered sugar
Preparation
1. Peel and grate the apples. Put them in a pot with 50 g sugar, 20 g butter, the cinnamon and cloves. Cook over medium heat for 15 minutes, stirring from time to time, until softened and little liquid remains at the bottom of the pot. 2. In a bowl, mix 75 g cold butter with 5 tablespoons sugar. Add the eggs and flour, then knead until you have a cohesive dough. Cover and refrigerate for 30 minutes. 3. Let the apples cool for 20 minutes. Divide the dough in two. Roll out one half and place it in a baking pan lined with parchment paper or well greased. 4. Spread the apples over the pastry. Cut the remaining dough into strips and arrange them on top in a lattice. Bake the pie for 25 minutes at 180°C, until the pastry is golden. 5. Let it cool completely, about 60 minutes, then slice and dust with 10 g powdered sugar.
Notes
You can make the dough a day ahead and keep it in the fridge; covered, the pie will keep in the fridge for up to 3 days, although the base gradually softens. Serve it with plain yogurt; the strips on top give it the look of an apple tart. Firm, slightly tart apples hold their shape in the filling, while mealy ones break down quickly. If the apples are very sweet, the clove flavor may seem stronger, so you can leave them out. The dough contains gluten, dairy and eggs.
Frequently asked questions
What should I do if the dough cracks when I roll it out?
Leave it at room temperature for 5 minutes, then gently press the cracks together with your fingers.
Can I use pears instead of apples?
Yes, use 1 kg firm pears and grate them just like the apples.
What should I do if the filling releases too much liquid?
After grating the apples, leave them in a sieve for 5 minutes before cooking them.
