In another bowl, we put 400 grams of flour and add 250 grams of Rama margarine, cut into cubes. We start kneading with our hands so that the margarine incorporates well into the flour, achieving a texture similar to wet sand.
After the yeast has risen, we add it to the mixture of flour and margarine, along with the four egg yolks and a packet of baking powder. We knead the dough with a lot of patience until it becomes smooth and elastic. Once we have achieved the desired consistency, we cover the bowl with a clean towel and let the dough rise for about 30 minutes in a warm place, away from drafts.
Meanwhile, we take care of the filling. In another bowl, we beat the egg whites of the four eggs with a pinch of salt using an electric mixer until we obtain a firm foam. Then, we gradually add 300 grams of sugar and continuously mix to ensure that the sugar dissolves completely. After obtaining a glossy foam, we add the grated coconut and gently fold it in with a spatula to avoid losing air from the mixture.
When the dough has risen, we divide it into four equal parts. On a floured work surface, we roll out each portion of dough into a rectangle, making sure the thickness is about one centimeter.
