Quince Cake
To prepare a delicious walnut and quince cake, the beginning is crucial. In a large bowl, start by mixing 200 grams of butter with 200 grams of sugar, using a mixer on medium speed, until the mixture becomes fluffy and creamy white. This is the moment to add 2 tablespoons of bee honey, which will bring a distinct flavor and natural sweetness. Continue by incorporating 4 egg yolks, one at a time, mixing well after each to ensure they integrate perfectly.
In another bowl, prepare the flavorful filling: take 100 grams of walnuts and roughly grind them, then add them to the butter and sugar mixture. Now add 200 grams of grated quince, which you sprinkled with a little flour to prevent it from releasing juice. This will add a note of freshness and an interesting texture to the cake.
Sifted beforehand, add 250 grams of flour together with 1 packet of baking powder, the grated zest of one lemon, and 1 packet of vanilla. Gently mix the dry ingredients with the wet ones, being careful not to deflate the air in the mixture. Finally, beat 4 egg whites with a pinch of salt until they become firm, and carefully fold them into your batter using a spatula to keep the air and achieve a fluffy cake.
Prepare a loaf pan, greasing it with butter and generously dusting it with flour to prevent sticking. Pour the batter into the pan and level the surface with a spatula. Preheat the oven to 180 degrees Celsius and bake the cake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
Once the cake is baked, let it cool slightly in the pan, then carefully remove it onto a wire rack. Once it has completely cooled, you can choose to dust it with powdered sugar for an elegant look or glaze it with melted chocolate, thus giving it an extra flavor.
