To prepare a delicious and refined dessert, start by separating the egg whites from the yolks. In a large bowl, add the yolks and sugar. Use an electric mixer to beat them together until the mixture becomes frothy and triples in volume, having a light yellow color. This step is essential, as the incorporated air will give the dessert a fluffy and airy texture.

Once you have a homogeneous mixture, gradually add the milk. It is important to mix gently to avoid losing air from the mixture. Once the milk is well incorporated, put the mixture on medium heat. Stir constantly to prevent sticking to the bottom of the pot. You will know it is ready when the mixture starts to thicken and sticks slightly to the spoon. This moment is crucial, as it will ensure a creamy base for your dessert.

Once you have reached the desired consistency, take the pot off the heat and divide the mixture into two separate bowls. In one of them, add the cocoa and mix well until the cocoa is completely incorporated. Let both mixtures cool to room temperature, then transfer them to the refrigerator to speed up the process.

After they have cooled properly, take the whipped cream and beat it until firm, being careful not to turn it into butter. Gently fold the whipped cream into each of the two mixtures, incorporating it with a spatula using gentle motions to keep the air. Then, you can start layering them in the desired shape, pouring the first layer of the cocoa mixture, followed by the second layer of the white mixture.

Once you have completed the layers, cover the mold with plastic wrap and place it in the freezer for about 4 hours. This step is essential to achieve a well-frozen dessert that is easy to portion. Once the time has passed, take the mold out of the freezer. Carefully invert the dessert onto a flat plate, being careful not to break it.

To finish the preparation, melt the dark chocolate in a bain-marie or in the microwave, stirring frequently to avoid burning. When the chocolate is completely melted, pour it evenly over your dessert, allowing it to drip slightly over the edges for an elegant look.
