To prepare these delicious filled pastries, the beginning is essential. In a large bowl, add the lard and sour cream, mixing them well with a mixer or a spatula. This step will ensure a creamy and rich base for our dough. Once the mixture is uniform, start adding the egg yolks, vanilla essence, and gradually the sifted flour. It is important to sift the flour to avoid lumps that could affect the final texture of the pastries.

Kneading the dough is a key moment; you need to achieve a dough that no longer sticks to your hands. If you notice it is too wet, do not hesitate to add a little extra flour. Once the dough is ready, divide it into six equal pieces. Each piece will be rolled out into a thin sheet, which you will generously brush with melted and cooled butter. Then, roll each sheet along the long side, creating tight rolls that will be wrapped in plastic wrap. Place them in the refrigerator to harden and maintain their shape, leaving them there until the next day.

When you are ready to continue, take one roll out of the refrigerator and cut it into slices about 1-1.5 cm thick. Place each piece on a work surface and shape it into a round form, gently pressing with your fingers. In the middle of each slice, add a teaspoon of the previously prepared filling. This filling consists of beaten egg whites with a pinch of salt, and then, carefully, sugar is added, mixing until you achieve a glossy foam. Finally, fold in the ground walnuts, mixing gently to maintain the aeration of the mixture.

After adding the filling, cover it with the dough, folding the edges from two sides towards the middle and twisting the remaining free ends, like a candy wrapper. Place the resulting pastries in a tray lined with baking paper, leaving enough space between them to bake evenly. Preheat the oven to medium temperature and bake the pastries for 10-15 minutes, until they become golden and appetizing.

After baking, remove the pastries from the tray and, while still hot, roll them in vanilla powdered sugar, which will give them a shiny appearance and a sweet taste. Repeat the process with all the rolls. These pastries will surely become the stars of the table, being perfectly suited for any occasion, but also for moments when you want to indulge in something sweet and special. Enjoy them with a cup of tea or coffee, savoring their delicious flavors!
