Black Cake with Semolina Cream (Vegan)
To prepare a delicious cake, start by making the layers. In a small bowl, mix all the dry ingredients, including flour, sugar, baking powder, and a pinch of salt. Make sure they are well combined to avoid lumps. In another bowl, prepare the wet ingredients, which may include eggs, milk, and oil. Whisk them well with a whisk or mixer to achieve a smooth mixture. Once you have a uniform texture, add the dry ingredients to the wet ones and mix everything with a spatula, being careful not to deflate the batter.
After the batter is ready, divide it evenly into two baking pans. You can use 20 cm pans to achieve the right thickness for the layers. Make sure the pans are well greased or lined with parchment paper to prevent sticking. Bake each layer in a preheated oven at 180 degrees Celsius for about 25-30 minutes, or until a toothpick inserted in the center comes out clean. After baking, let the layers cool completely on a wire rack.
In the meantime, you can prepare the cream. In a saucepan, combine all the ingredients except for the margarine. Place the mixture over medium heat and whisk constantly to avoid burning. When the cream begins to boil, reduce the heat and continue to stir until it thickens. This may take a few minutes, so be patient. When the cream has reached the desired consistency, set it aside and let it cool slightly. Then, add the margarine, cut into small cubes, and mix well until fully integrated. The cream should be smooth and glossy.
Once the layers have completely cooled, take the first layer and place it on a serving platter. Spread a generous layer of cream on top, making sure it is evenly distributed. Then, place the second layer on top of the cream. It is important not to soak the layers, as the cream will add enough moisture. Cover the cake with plastic wrap and refrigerate for a few hours, ideally overnight, to allow the flavors to develop and the layers to meld perfectly with the cream. When serving, you can decorate the cake with grated chocolate or fresh fruits for an appetizing look. This cake will surely be a delicacy appreciated by all!
