Banana Bread with Fresh Cheese Sauce
Cake: We start by preparing the ingredients for the cake, ensuring that the butter is at room temperature so that it can be creamed more easily with the sugar. In a large bowl, the butter is vigorously creamed with the sugar and vanilla sugar until the mixture becomes frothy and light yellow. This step is essential because the incorporated air will give the cake a fluffy texture. Separately, in another bowl, we crack the eggs and beat them well with a whisk until they become homogeneous. Gradually, we add the eggs to the butter mixture, continuously mixing to achieve a uniform emulsion.
Once the eggs are incorporated, the next step is to add the bananas. We choose well-ripened bananas, which we mash with a fork or a blender until we obtain a smooth paste. We add this banana paste to our butter and egg mixture, gently but firmly mixing. Then, we begin to gradually add the sifted flour, lemon essence, salt, and baking powder. It is important to mix carefully so that the ingredients combine without forming lumps. We obtain a homogeneous, slightly thicker mixture, which will be the base of our cake.
We prepare a cake pan, greasing it with butter and, if desired, lining it with a little flour to prevent sticking. We pour the mixture into the pan, making sure to level it evenly. With the oven preheated to 180 degrees Celsius, we place the pan inside and let the cake bake for about 50 minutes, until it turns golden and, when inserting a toothpick in the middle, it comes out clean.
While the cake is baking, we prepare the fresh cheese sauce. In a bowl, we put the softened butter and fresh cheese. We cream the two ingredients together until we obtain a smooth and creamy paste. We add the vanilla sugar and powdered sugar, continuing to mix. You will notice that the sauce becomes softer, but don't worry, as it will harden once it cools.
After the cake has baked and cooled completely, we pour the cheese sauce over it, making sure to evenly cover the entire surface. We cover the pan with plastic wrap and let the cake sit in the refrigerator for a few hours, or ideally, overnight, to allow the sauce to set and perfectly integrate into the cake. Thus, we obtain a delicious, moist, and flavorful dessert, perfect to be enjoyed with a cup of tea or coffee. Enjoy your meal!
