The general cleaning of the fridge, in anticipation of future sausages and bacon, resulted in the invention of a kind of 'something' delicious, an adaptation of a sweet I've known for some time. Since the cheese I had was salty, I decided to turn everything I found in the fridge into a savory dish. I started with cottage cheese, 'burduf' cheese, and a leftover piece of smoked cheese, all of these ingredients promising a rich flavor. I added the leftover olives from another recipe and a few bell peppers that were saved from being sacrificed in relish, thus creating a perfect base for an innovative dish.
In a large bowl, I began by preparing an olive paste, mixing them well until they achieved a uniform consistency. Then, I added eggs, flour, and sparkling water to obtain a soft and slightly frothy dough. The green garlic tops were finely chopped and added to the mixture, but if you have chives, you can use them without hesitation for an even finer flavor.
Here comes the interesting part: I mixed the cheeses, adding eggs and beating them well until I obtained a thick cream, similar to sour cream. The bell peppers were cut into small cubes, and the pancakes into thin strips, preparing them for assembly. I greased a heat-resistant dish with a little oil and began to build this dish. The first layer was the cheese cream, followed by the strips of pancakes and the cubes of bell pepper. I repeated this process, adding another layer of cheese, a sprinkle of sweet pepper, and again, strips of pancakes.
The last layer was, of course, the cheese cream, which will give an appetizing look to the dish after baking. I preheated the oven, then placed the dish at the warm shore, leaving it for thirty minutes: the first fifteen minutes on high heat, to achieve a slightly browned crust, and then I reduced the temperature to medium. It is important not to leave the dish longer than necessary, as it can turn from a soft and creamy delicacy into a dry and tasteless one.
