Turnatei vegetable soup with egg threads

Turnatei vegetable soup is a simple soup made with jarred vegetable mix, pureed tomatoes and kapia pepper. The eggs beaten with flour run through a bag straight into the boiling broth and set into thin threads. I eat it hot, straight from the bowl, and I don't let it sit long after I turn off the heat. Preparation: 15 minutes. Cooking: 23 minutes. Total time: 38 minutes. Servings: 4. About 105 kcal and 5 g protein per serving.
Ingredients
- 1 medium onion (150 g)
- 1 kapia pepper (100 g)
- 1500 ml still water
- 1 bay leaf
- 1 jar vegetable mix for soups
- 1/2 can pureed tomatoes
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 country eggs
- 3 heaped tablespoons flour
- 1/2 teaspoon freshly ground red pepper
- 15 g green dill
Preparation
1. Clean the onion and the kapia pepper, rinse them, chop them finely and put them over medium heat in a pot with 1500 ml still water, the bay leaf, the jarred vegetable mix, 1 teaspoon salt and 1/2 teaspoon ground black pepper. 2. Let the soup boil for 10 minutes, then add 1/2 can pureed tomatoes and cook for another 10 minutes. 3. In a bowl, beat the eggs with 3 heaped tablespoons flour and 1/2 teaspoon freshly ground red pepper. 4. Put the mixture in a clean bag, cut the tip until the opening is very small and let the mixture run into the boiling soup. 5. Cook for 3 minutes, turn off the heat, sprinkle 15 g chopped green dill and serve.
Notes
Serve with good bread, preferably with a crust, so you have something to tear next to the soup. Contains gluten and eggs. The jarred vegetable mix varies in strength, so taste the soup before you add all the salt. If the turnatei stick together, the mixture went in too fast or the soup is not boiling hard enough. It keeps 3 days in the fridge and reheats on low heat.
Frequently asked questions
Can turnatei be made without a bag?
Yes, with a teaspoon you pour the mixture in a thin stream over the soup, but the threads come out thicker and more uneven.
What can I use instead of kapia pepper?
A sweet red bell pepper of about 100 g, with no change in cooking time.
Can I use fresh tomatoes instead of pureed ones?
Yes, 300 g peeled and finely chopped tomatoes cook for 10 minutes, the same as the pureed tomatoes in the recipe.
What if I can't find jarred vegetable mix for soups?
One large carrot, 100 g celery and 15 g fresh parsley give a soup close in taste, but parsnip is missing.
