Low bean stew is a classic dish that takes us back to childhood meals, where its inviting aroma delighted our senses and gathered us around the table. This simple and tasty recipe is perfect for days when we want a light meal, as well as for those moments when we want to indulge in a comforting dish. Let's get cooking!

Preparation time: 15 minutes
Cooking time: 45 minutes
Total time: 60 minutes
Number of servings: 4-6

Necessary ingredients:
- 500 g white beans
- 1 onion
- 1 carrot
- 2 heaping tablespoons of mixed vegetables (ideally a mixture of veggies)
- 4-5 green onion tops
- Fresh dill
- Fresh parsley
- 4-5 tablespoons homemade tomato paste
- 3 tablespoons olive oil or sunflower oil
- 3 cloves of garlic
- Salt, to taste
- Pepper, to taste
- 1/2 teaspoon sweet paprika

Step 1: Preparing the beans
An essential first step in achieving a delicious dish is selecting the beans. Make sure the beans are clean and free of impurities. Rinse the beans in 2-3 waters and let them soak in hot water for 3-4 hours or, ideally, overnight. This step not only reduces cooking time but also aids digestion.

Step 2: Boiling the beans
After soaking, place the beans in a pot with cold water and bring to a boil. Once the water starts boiling, cook the beans for about 10 minutes. Then, drain the water and add boiling water again, being careful not to fill the pot too much to avoid overflow.

Step 3: Preparing the vegetables
While the beans are boiling, prepare the vegetables. Peel the onion and cut it into small cubes. Grate the carrot, then dice it. Wash the parsley and dill well, remove the stems, and chop finely. You can slice the green onion tops into rings or, if using dried onion, chop it finely.

Step 4: Cooking the vegetables
Add all the prepared vegetables to the pot with beans, sprinkle with salt and pepper, and let them boil over medium heat. At this point, peel and crush the garlic, then add it to the pot. Allow all the ingredients to blend their flavors for about 20-30 minutes until the beans are well cooked.

Step 5: Preparing the sauce
In a pan, heat the oil and add the green onion. Sauté for a minute, then add the tomato paste. Mix well and add a few tablespoons of the liquid in which the beans were cooked. Let the sauce simmer, then add the drained beans. Season with salt, pepper, and sweet paprika, then let everything simmer on low heat for 5 minutes.

Step 6: Finalizing the dish
When the beans are well incorporated into the sauce, add the chopped dill and stir. Now is the perfect time to taste and adjust the spices to your liking. If you want a more intense flavor, you can add a bit of smoked paprika or even some chili peppers.

Serving
Low bean stew is served warm, alongside crispy pickles or red onion for a contrast of flavors. It pairs wonderfully with a glass of red wine or fresh lemonade.

Useful tips:
- Variations: You can also add other vegetables, such as bell peppers or zucchini, for added nutrients and diverse flavor.
- Storage: The dish can be kept in the fridge for 2-3 days, and the taste improves the next day when the flavors meld.
- Nutritional benefits: Beans are an excellent source of plant-based protein, fiber, and micronutrients, positively impacting digestion and heart health.
