The first step is preparing the seitan, which you can make at home or purchase from specialty stores. Once you have obtained the seitan, slice it thinly and sprinkle Garam Masala on both sides. This Indian spice mix, which includes cinnamon, cloves, cardamom, and other flavors, will give your dish a distinctive taste.

In a non-stick pan, add a tablespoon of sesame oil and let it heat up. When the oil is hot, add the seitan slices and sauté them gently until golden. Once they are ready, remove them from the pan and set them aside on a plate.

Use the same pan to create a delicious sauce. Add a tablespoon and a half of sesame oil and sauté the finely chopped onion. Ideally, you should cook it until it becomes translucent, releasing its aroma. If you want to add more flavor, you can also add fresh pineapple or mango, diced, sautéing them together with the onion. If you prefer canned fruit, wait until the onion becomes soft, then add them. Let everything simmer gently for about 5 minutes.

Now it's time to bring a touch of creaminess to your dish. Add coconut milk, allowing the sauce to reduce to about a quarter of its volume. This step will intensify the flavors and add a silky texture. After the sauce has reduced, add the reserved seitan, stirring gently to incorporate well. Taste and adjust with salt and, if necessary, an extra splash of Garam Masala to achieve the perfect balance of flavors.

Let everything simmer for a few more minutes so that the liquid reduces and you achieve a rich sauce, but not too dry. Your dish should be a delicious combination of fruit and seitan, enriched with Indian flavors.

To serve this savory dish, I recommend pairing it with plain boiled basmati rice in salted water. If you want to add a touch of refinement, you can lightly sauté it in a tablespoon of sesame oil to enhance its flavor. Also, don’t forget about Indian Naan bread, which will perfectly complement the meal, being ideal for soaking up the delicious sauce. This recipe is not only a perfect option for fasting but will also bring a touch of Indian magic to your kitchen!
