Lentils with Fried Eggs
To start preparing this delicious recipe, the first essential step is to prepare the lentils. So, place the cleaned and washed lentils in several waters to soak in cold water for about 2 hours. This soaking process is crucial as it helps the lentils rehydrate and become easier to cook. After the time has passed, drain the lentils and rinse them 1-2 times to remove impurities.
Next, put the lentils in a pot with cold water, just enough to cover them by a finger, adding a bay leaf and a few thyme leaves to give it a pleasant aroma. Bring the water to a boil and let the lentils simmer over medium heat until they are al dente. It is important not to add salt during boiling, as this can hinder the cooking process. Once the lentils are ready, drain them and let them cool.
Meanwhile, prepare the filling. In a pan, heat the oil and butter over medium heat and add the finely chopped onion and crushed garlic. Sauté these until they become translucent and fragrant, being careful not to burn them. Then, add the chopped bell peppers and continue to sauté until they soften, about 5-7 minutes. This colorful and savory mixture will add extra flavor to the lentils.
After the onion, garlic, and pepper mixture is ready, add the cooled lentils, finely chopped fresh herbs, and half of the grated cheese. Mix the ingredients well and season with salt and pepper to taste. Transfer the mixture to a greased baking dish, ensuring it is evenly distributed.
To finish the dish, lightly beat the 4 eggs and season them with a little salt and pepper. Pour the beaten eggs over the mixture in the dish and sprinkle the remaining grated cheese evenly on top. Now it’s time to place the dish in the preheated oven at 190 degrees Celsius. Bake for about 20-25 minutes or until the cheese on top melts and forms a golden, appetizing crust.
