Chopped spinach with fried eggs

Chopped spinach with fried eggs means boiled spinach, chopped and bound with a little flour and milk, served with fried eggs on top. It comes out rather thick, so it sits on a spoon, and I like it chopped coarsely, not pureed, left to reduce until no more water runs from the pan. Preparation: 15 minutes. Cooking: 26 minutes. Total time: 41 minutes. Servings: 4. About 220 kcal and 12 g protein per serving.
Ingredients
- 600 g spinach
- 1500 ml water
- 1 teaspoon salt
- 4 eggs
- 1 medium onion (150 g)
- 4 garlic cloves
- 1 tablespoon oil
- 20 g butter
- 1 tablespoon flour
- 60 ml milk
- 1/4 teaspoon ground pepper
For garnish
- 100 g papaya (cubes)
- 2 radishes (slices)
Preparation
1. We wash the spinach in several changes of water. We put 1500 ml water to boil with 1/2 teaspoon of salt, add the spinach and boil it for 12 minutes, until it softens. 2. We peel the onion and garlic and chop them finely. 3. We take the spinach out of the pot, rinse it in cold water and drain it well. We chop it with a wooden chopper. 4. We heat the butter and oil in a pan, add the onion and garlic and sauté over low heat for 5 minutes, until they turn glassy. 5. We add the flour and stir, then pour in the milk and keep stirring so no lumps form. We add the chopped spinach, 1/2 teaspoon of salt and 1/4 teaspoon of ground pepper. We let it reduce for 5 minutes, until no more water runs and it reaches the consistency you want. 6. Separately, for each serving, we fry one or two fried eggs in a non-stick pan without fat, 4 minutes, until the whites turn white and the yolk stays soft. 7. We serve the spinach on plates, with the eggs on top, and place the papaya cubes and radish slices around.
Notes
Young spinach, with small leaves, cooks in 2-3 minutes, not 12, so keep an eye on it after you put the leaves in the water. If you choose spinach with thick stems, cut them off before boiling, otherwise they stay fibrous. If the sauce turns out too thick, add a spoon of milk at a time, until it slides easily off the spoon. It goes well with toast. For a dairy-free version, the butter is replaced with 20 g oil and the milk with 60 ml plant milk, but the recipe contains eggs and dairy. Cooked spinach keeps in the fridge for up to 3 days, and the eggs are fried fresh.
Frequently asked questions
Can it be made with frozen spinach?
Yes, thawed and drained well, you only need to boil it for 4 minutes, until it softens.
Why is the spinach watery?
Usually because it did not reduce enough. Let it sit 3 more minutes over low heat, stirring, until no water is left at the bottom of the pan.
What can I use instead of flour?
Starch, in half the amount, that is 1/2 teaspoon, dissolved in 2 tablespoons of cold water and poured into the spinach while it simmers gently. It thickens in a few seconds.
How long do I fry the eggs if I want them well done?
The yolk sets completely in about 8 minutes, with a lid on the pan.
