To make a delicious recipe of dumplings with plums, we start by preparing the necessary ingredients. In a pot, we add a cup of water and a pinch of salt, then put it on the heat. We wait for the water to reach boiling point, at which point we add the butter. It is essential that the butter melts completely and the water returns to a boil. Once this happens, we begin to gradually add the flour, stirring constantly with a spatula or wooden spoon. The dough will turn into a dense, homogeneous mixture that will easily detach from the walls of the pot.

When we have achieved this consistency, we take the pot off the heat and let the dough cool slightly. It is important that the dough is warm but not hot, so that we can add the egg without cooking it. Once the dough has cooled sufficiently, we add the egg and start mixing vigorously until it is fully incorporated. The dough should become smooth and have a pleasant texture.

After the dough is ready, we start forming a stick that we divide into 8 equal pieces. Each piece is rolled between our palms, making sure to obtain a flat shape. In the middle of each shape, we place the plum halves, ensuring they are well arranged. After filling all the pieces, we roll them into dumplings, sealing the filling well so it doesn’t escape during boiling.

Now it is time to prepare another pot with water and salt, which we put to boil. When the water reaches boiling point again, we carefully add the dumplings, being careful not to overcrowd them. They will be ready when they rise to the surface of the water, a sign that they have cooked evenly. Once the dumplings have surfaced, we remove them with a slotted spoon and let them drain a bit.

Finally, we prepare a mixture of breadcrumbs that we previously toasted in a pan with a little oil, adding a pinch of salt to enhance the flavor. Each dumpling is carefully rolled in the warm breadcrumbs so that it is evenly coated. This step not only gives them a crispy crust but also adds a special taste.
