We start preparing the dough by placing a fresh egg in a large bowl. Then, we add a tablespoon of olive oil, which will give the dough a finer texture, and a pinch of salt, essential for enhancing the flavors. Using a fork, we beat the egg with the oil and salt, mixing them well until we obtain a homogeneous composition. It is important that all the ingredients are well integrated so that the dough has a uniform consistency.

After obtaining this liquid base, we begin to gradually add the flour. It is recommended not to add all the flour at once, as the necessary amount may vary depending on the size of the egg used. We start by adding one measure of flour at a time, constantly mixing with a spatula or with our hands until the dough begins to pull away from the sides of the bowl. We continue to knead until we obtain an elastic and easy-to-handle dough that does not stick to our hands.

Once we have obtained the desired dough, we cover it with a kitchen towel and let it rest for 15-20 minutes. This resting period is essential as it allows the gluten to relax, which will facilitate the subsequent rolling out.

After the dough has rested, we prepare to roll it out. We sprinkle a flat work surface with flour to prevent the dough from sticking. Using a rolling pin, we roll the dough into a sheet as thin as possible, almost transparent. It is important to pay attention to the thickness of the sheet, as a sheet that is too thick will result in a heavier and less pleasant final product.

Once we have obtained the desired sheet, we let it dry on a kitchen towel for about 20 minutes. This step will help to strengthen the sheet, making it easier to cut. After the sheet has dried, we carefully roll it up and cut it in half. Using a sharp knife, we cut thin strips, which will be the base for various delicious dishes. The obtained strips can be used in soups, salads, or as a side dish for different meals, adding a touch of flavor and texture.
