Dumplings (Knedli) with chicken and sour cream
To prepare a special culinary delight, we start by dissolving fresh yeast in warm milk, adding a pinch of salt. This is the essential step, as the yeast will activate the fermentation of the dough, providing a fluffy and airy texture. In a large bowl, we add the flour, the two eggs, and the milk with the dissolved yeast. It is important to knead the dough well until it becomes elastic and bubbles form on the surface, a sign that the yeast is doing its job. Once we have obtained a homogeneous dough, we cover it with a clean towel and let it rise for about 30 minutes in a warm place.
In the meantime, we prepare the bread cubes. We take a peeled loaf of bread and cut it into uniform-sized cubes to ensure even frying. In a pan, we heat a little oil or butter and fry the bread cubes until they become golden and crispy. These will add a delicious texture to our dough.
After the dough has risen, it is time to add the toasted bread cubes. We carefully incorporate them into the dough, kneading gently until everything is well combined. On a floured surface, we form two cylinders with a diameter of 7-8 cm. It is essential to ensure that we have a larger pot for boiling, as the dough will expand during this process.
We place the dough cylinders in boiling salted water and let them cook for 15 minutes on one side. Then, we carefully turn them over and let them cook for another 15 minutes, ensuring that the water does not boil vigorously but simmers gently. This step is crucial for obtaining a soft and fluffy final product.
Once they are boiled, we remove the cylinders from the water and let them cool slightly. With a sharp knife, we slice them into finger-thick pieces. These slices are ideal to be served warm, alongside any sauce you prefer. I chose to prepare a sauce from an older recipe for chicken stew with sour cream, which perfectly complements the flavor of our dough. This dish is not only tasty but also comforting, making it ideal for family meals or special occasions. Enjoy it warm, savoring its intense flavors and unique texture!
