To prepare a delicious fruit pie with pastry sheets, start by carefully cleaning the selected fruits, removing their seeds and skin. It is essential to choose fresh fruits to achieve an intense flavor. After cleaning them, cut them into small cubes so that they integrate evenly into the filling. Add sugar to taste; I recommend 4 tablespoons, but you can adjust the amount according to the sweetness of the fruits used. Also, incorporate flour and a little cinnamon to add extra flavor. The flour will absorb the juice of the fruits, keeping the filling juicy inside the pie and preventing leaks.

Next, prepare the work surface. Place three sheets of pastry on top of each other, making sure that each sheet is brushed with melted butter to give them a rich taste and a crispy texture. After completing this step, cut the sheets into three parts lengthwise, creating thin strips. On each of these strips, place a tablespoon of the previously prepared fruit filling. It is important not to overload the strips to avoid a leaking filling.

Now comes the fun part: fold each strip from corner to corner, forming triangles. Make sure to carefully seal the corners to keep the filling inside. This technique will give the pie a beautiful appearance and make it easier to handle.

Place the triangles on a baking tray lined with parchment paper. To achieve a golden and crispy crust, brush each triangle with melted butter and sprinkle large crystal sugar on top, which will caramelize during baking. Preheat the oven to a medium temperature and bake the pies for about 15 minutes. They are ready when they have a slightly browned color, and the aroma of fruits and cinnamon will fill the entire room. Serve them warm or at room temperature, and enjoy a dessert that will surely impress everyone!

Ingredients: 1 kg of phyllo dough; 5 large, ripe peaches; sugar - to taste; 2-3 tablespoons of flour; ground cinnamon; melted butter - for brushing the dough.
