Sweet Buns with Apples and Nuts

We heat the milk until it becomes warm, but not hot, and pour it into the well, along with 50 grams of sugar and fresh yeast. It is important to mix the yeast with a spoon or with your fingers until it completely dissolves, ensuring that all the sugar crystals are well integrated into the mixture.
After the yeast has dissolved, we add the remaining sugar, 100 grams, and the soft butter, cut into cubes. We start kneading the dough with our hands, adding, if necessary, a little warm water, until we achieve a non-sticky but elastic consistency. It is essential to knead well for at least 10 minutes to activate the gluten in the flour, which will make the rolls fluffy and airy.
While the dough is rising, we turn our attention to the filling. We peel the apples and cut them into small cubes, making sure that there are no large pieces left that could affect the texture of the rolls. We mix the apple cubes with sugar and chopped walnuts, allowing the flavors to blend. The walnuts not only provide a special taste but also add an extra crunch.
After the dough has risen, we tear off small pieces, forming balls the size of a golf ball. Each ball is flattened with the palm, and in the center, we place a teaspoon of the apple filling. Carefully, we pinch the edges of the dough, forming a ball again to enclose the filling inside. We continue this process until we finish both the dough and the filling, making sure to place them on a baking tray lined with parchment paper.

After they have puffed up, we beat an egg and brush each ball to give them an appetizing golden color when baked. We preheat the oven to a medium temperature and place the tray inside, allowing the rolls to bake for about 15 minutes, until they become golden brown and fragrant.
