Summer Pizza
To prepare a delicious and aromatic pizza, we start with the yeast starter. In a small bowl, we add fresh yeast along with two tablespoons of warm water. It is important that the water is lukewarm, not hot, so as not to destroy the yeast. We sprinkle flour on top and mix well until we obtain a homogeneous composition. We cover the bowl with a clean towel and let it rise for 10 minutes, until you notice that the starter becomes frothy and doubles in volume.
In the meantime, we take care of the other dough ingredients. In another bowl, we add flour, salt, olive oil, and warm water, being careful to respect the proportions. Once the starter is ready, we add it to the rest of the ingredients and start kneading the dough. It should be elastic and slightly sticky. After kneading well, we let the dough rise in a warm place, covered with a towel, until it doubles in volume, which can take between 30 and 60 minutes, depending on the room temperature.
In parallel, we start preparing the tomato sauce. We wash the fresh tomatoes, cut them in half, and grate them, being careful to remove the seeds, as we want a fine sauce. We put the juice obtained in a pot and place it over low heat. We add olive oil, a pinch of salt, chili to taste, and dried oregano, then we let the sauce simmer slowly, stirring occasionally, until it reduces and becomes thick, similar to a classic pizza sauce.
Once the dough has risen, we divide it into two equal parts. We take the first piece and roll it out evenly on a baking tray lined with parchment paper, making sure to achieve a round or rectangular shape, depending on our preferences. We evenly spread the previously prepared tomato sauce, then sprinkle a generous layer of grated cheese. We continue with slices of Prague ham, add diced red and green bell peppers, and a few olives, which will give a special flavor. Finally, we sprinkle another fine layer of grated cheese and, if desired, we can add a little oregano on top for extra flavor.
We preheat the oven to 220 degrees Celsius and, when ready, we place the tray with the pizza inside. We bake for about 20 minutes or until the dough turns golden and crispy, and the cheese melts and forms a delicious crust. We do the same with the second pizza, and then, when both are ready, we serve them hot, with tomato sauce on the side, to enhance the tasting experience. Enjoy your meal!
