The first step is to chop all the ingredients. The bell pepper and bacon will be diced into small cubes so that they integrate perfectly into the filling of the thighs. The green onion is finely chopped, adding a note of freshness and a subtle flavor. Once you finish chopping, in a large bowl, mix all the chopped ingredients with a beaten egg. Add ground pepper and dried oregano, which will give a special aroma to the filling. Make sure the mixture is homogeneous, so that each bite has an explosion of flavors.

After obtaining the filling, divide it into four equal portions. Now comes the interesting part: stuffing the chicken thighs. Take one thigh and fill it with a portion of filling, being careful not to overstuff it. At the wider end of the thigh, secure the filling with a toothpick to ensure it doesn’t come out during baking. Do the same with the other thighs, generously filling them.

Once all the thighs are stuffed, it’s time to prepare them for the oven. Rub each thigh with a bit of olive oil, then sprinkle salt, pepper, and oregano on top so they develop a flavorful and delicious crust during baking. Place the thighs in a baking tray, adding a bit of white wine and water, which will help keep the meat juicy.

Put the tray in the preheated oven at 180 degrees Celsius and bake the thighs for about 30 minutes. During this time, the aroma will fill the entire kitchen, and the thighs will become golden and appetizing. After the baking time has expired, take the tray out of the oven and let it cool for 5 minutes. Now you can carefully remove the toothpicks and cut the thighs in half for easier serving.

For a perfect accompaniment, prepare a creamy mashed potato that will complement the flavors of the stuffed thighs excellently. You can add butter and milk to the mash for a richer taste.
