Skewers with French Fries, Zucchini Fritters, and Sauce
We start with the meat, an essential ingredient in preparing this delicious dish. The first step is marinating, which will give the meat a special flavor. We take beef, cut it into suitable pieces, and place it in a bowl. Then, we add the wine, which will help tenderize the meat and enhance the flavor. Over the wine, we sprinkle salt, pepper, thyme, and oregano, and a grated clove of garlic will perfectly complete the mixture. We mix the ingredients well, cover the bowl with a lid, and let the meat marinate for a few hours to blend the flavors.
After we have finished marinating the beef, we move on to the chicken and pork. We cut both types of meat into pieces, put them in a casserole, and add olive oil, oregano, salt, and pepper. We mix well, and at the end, we add 100 ml of beer and the grated clove of garlic. We mix again and let the meat marinate, covering the casserole with a lid.
After letting the meat marinate, we place it in a strainer to drain the excess liquid. We separate the beef from the chicken and pork, ensuring they are ready to be cooked. While the meat drains, we take care of the zucchini. We wash the zucchini, grate them, and sprinkle them with salt, letting them sit for a while to release their water.
Now we can prepare the skewers. We start placing pieces of meat on skewers, beginning with the beef, continuing with the pork, and finishing with the chicken. Thus, we form five delicious skewers. Once we finish assembling the skewers, we place them on the stove grill, where we will fry them on low heat to cook evenly and retain their juiciness.
Meanwhile, we move on to preparing the zucchini fritters. In a bowl, we add the grated zucchini, finely chopped parsley, and grated garlic. We mix the ingredients, adding a beaten egg and a little flour to bind the mixture. In a pan, we heat the oil, and when it starts to sizzle, we add a tablespoon of the zucchini mixture, forming fritters. We fry them on both sides until they become golden and crispy, after which we remove them to a plate with paper towels.
Next, we take care of the sauce. In a bowl, we put Greek yogurt, salt, pepper, grated cucumber, grated garlic, and chopped basil and parsley leaves. We mix the ingredients well until we obtain a homogeneous sauce, which we set aside to infuse the flavors.
The last step is preparing the potatoes. We peel and cut the potatoes, and in a hot pan with oil, we fry them one by one until they become golden and crispy. After we take them out of the oil, we sprinkle salt over them to enhance the flavor.
Once the meat is properly fried, we remove it from the grill, making sure to keep it warm if the other dishes are not ready yet. When everything is prepared, we can enjoy these wonderful dishes with great appetite. Enjoy your meal!
