To prepare these delicious potato snacks, start by preparing the necessary ingredients. Boil the potatoes in their skins, making sure they are well washed beforehand. Once boiled, let them cool slightly, then remove the skins and cut them into pieces. Use a fine sieve to mash them, resulting in a smooth and lump-free potato puree. In a large bowl, add the diced butter, which should be at room temperature for easier incorporation. Using an electric mixer with spiral blades, mix the mashed potatoes together with the butter until you achieve a homogeneous and creamy mixture.

Once the mixture is well blended, start adding the flour. It is ideal to do this in two stages to avoid lumps. Add the first part of the flour and the salt, continuing to mix until the dough starts to come together. After integrating the first part of the flour, add the rest, continuing to mix until you obtain a dough that no longer sticks to your hands but remains soft and elastic.

Prepare the work surface by sprinkling a little flour, then roll out the dough using a rolling pin, keeping a thickness of about 1/2 cm. Use a knife or a dough cutter to create strips about 1 - 1 1/2 cm wide and 12 cm long. Place these strips on a baking tray lined with parchment paper, making sure to leave enough space between them to allow for expansion during baking.

Before placing the tray in the oven, beat an egg in a small bowl and use a kitchen brush to glaze each strip of dough. This will give a golden and shiny crust. After glazing the entire surface, sprinkle coarse salt crystals, sesame seeds, poppy seeds, or any other preferred ingredient on top for added flavor and texture.

Preheat the oven to a moderate temperature and place the tray on the middle rack. Bake the snacks for about 12 - 15 minutes, but be careful, as baking time may vary depending on each oven. When the snacks turn golden and crispy, remove the tray from the oven and let them cool in the tray to maintain their texture. These appetizers are ideal to be served alongside a dip sauce or simply enjoyed as they are, perfect for any occasion.
