Wild boar chop is a savory dish full of character, and the way it is cooked can transform a simple meal into an unforgettable culinary experience. To start, we ensure we have all the necessary ingredients and prepare for a cooking process that will fill the house with enticing aromas.

The first step is marinating the chop. We place the wild boar chop in a deep dish, making sure all the slices are well covered with white wine. It is essential to let the meat absorb the flavors for at least 12 hours in the refrigerator, allowing us to organize the rest of our preparations.

After the marinating period, we take out the chop and, with a sharp knife, make small incisions in each slice to stuff it with delicate pieces of smoked bacon and a few cloves of garlic, so that the flavors penetrate deeply into the meat. Preparing the vegetables is the next step. We peel the onion and garlic, then we take care of the tomatoes, which we carefully peel and cut into uniform cubes, just like the onion, for even cooking.

In a tray, we add two tablespoons of melted lard that will add a special flavor to the dish. We place the stuffed chop pieces, making sure to distribute them evenly. On top, we sprinkle the vegetable soup cubes from Maggi, a few slices of smoked bacon, sliced garlic, and finely chopped onion. The cubed tomatoes complete the mixture, bringing a touch of freshness.

To intensify the flavors, we add ground pepper and two bay leaves, then drizzle everything with 150 ml of semi-dry white wine and 500 ml of water. We cover the tray with a lid or aluminum foil, depending on what we have available, to maintain moisture and allow the meat to cook evenly.

The oven should be preheated to about 180 degrees Celsius. We let the roast cook for an hour, and after this time, we test it with a fork. If the meat is not tender, we add a little water and cover it again. Once the meat is tender, we remove the lid or foil and let the dish brown nicely on top, which will add a crispy texture and an irresistible flavor.

To serve, we prepare a creamy mashed potato or boiled potatoes, which we sprinkle with freshly chopped green parsley. A salad of tomatoes and cucumbers will perfectly complement the meal, bringing a fresh and refreshing contrast.
