To prepare a delicious meal of duck with oranges and caramelized cabbage, we will start by making sure we have all the necessary ingredients at hand. We begin by boiling the ducks in a pressure cooker for about 30 minutes. This process will not only make the meat more tender, but it will also release the characteristic flavors of duck meat. After boiling, we reserve some of the broth, as it will be essential for adding a rich flavor to the final dish.

Once the ducks are boiled, we take them out and place them in a tray. Here comes the magic of spices: we season the meat with various spices, such as salt, pepper, sweet or smoked paprika, garlic powder, and even a pinch of allspice to enhance the flavors. Meanwhile, we slice the oranges thinly, being careful to remove the white pith, which can impart a bitter taste. These orange slices will add a note of freshness and sweetness to the dish.

After preparing the tray, we place it in the preheated oven at 170 degrees Celsius for about an hour and a half. This is the perfect time to take care of the caramelized cabbage. We will prepare two types: a simple one, which will be slightly sweet, and one with spicy seasoning, which will add a spicy note. For the simple cabbage, we slice the cabbage into thin strips, sauté it in a pan with a little oil until it becomes soft and caramelized, adding a little sugar to enhance the sweet flavor.

For the cabbage with spicy seasoning, we will add, besides oil and a pinch of salt, some of the spicy seasoning that will give it a savory flavor. We mix well and let the cabbage cook until it becomes golden and crispy.

Once the ducks have been in the oven and have browned beautifully, we take care of the sauce. We squeeze the juice from the oranges and, at the end of the preparation, we mix this juice with a glass of rosé wine and a teaspoon of spicy seasoning. This mixture will be poured over the browned ducks, and then we will let them stay in the oven for a few more minutes, so the flavors blend perfectly.

Once everything is ready, we serve the ducks alongside the two types of caramelized cabbage, enjoying a savory meal full of contrasting flavors and textures. It is a simple yet extremely tasty recipe that will surely impress all loved ones.
