Muffins with Flax Seeds and Oat Bran
To prepare these delicious apple and carrot muffins, we start by organizing our ingredients. In a large bowl, we combine the dry ingredients: 200 g of flour, 50 g of ground flaxseeds, 100 g of oat bran, 100 g of brown sugar, 1 teaspoon of baking soda, a pinch of salt, 1 teaspoon of baking powder, and 1 teaspoon of cinnamon. These ingredients will not only contribute to the texture and flavor of the muffins but will also add extra nutrients.
We mix the dry ingredients well with a spatula, ensuring that the baking soda and baking powder are evenly distributed. Then, we turn our attention to the wet ingredients. We grate 2 large apples and 2 carrots, which will add not only flavor but also moisture and natural sweetness. We add these ingredients to the bowl with the dry ingredients, mixing carefully to avoid lumps.
In another container, we beat 2 large eggs together with 150 ml of milk and 1 teaspoon of vanilla extract. This combination will provide a refined taste to the muffins, and the vanilla will enhance the flavors. After thoroughly homogenizing the mixture, we add it to the dry and root vegetable mixture. We mix everything with a spatula or a wooden spoon, but without overdoing it, so that the muffins remain fluffy.
Now we prepare the muffin molds. In a muffin tray, we place paper liners and fill each mold about to the top with the obtained mixture. We make sure not to fill them completely, as they will rise during baking. We preheat the oven to a medium temperature, around 180 degrees Celsius. We place the muffin tray in the preheated oven and let them bake for about 25 minutes.
To check if the muffins are baked, we insert a toothpick into the center of one. If the toothpick comes out clean, they are ready. If there is batter on the toothpick, we leave them in the oven for a few more minutes, checking occasionally. Once baked, we remove them from the oven and let them cool for a few minutes in the tray before transferring them to a cooling rack. These apple and carrot muffins are perfect for a healthy snack or an energizing breakfast, full of flavors and with a soft texture, perfect to be enjoyed with a cup of tea or coffee.
