- Zest of one orange
- 1 essence of rum
- 1 essence of vanilla

- 7 egg whites
- 50 g of coconut
- 300 g of ground walnuts (half ground, half finely chopped)
- 150 g of sugar
- 50 g of raisins (optional)
- Brandy for hydrating the raisins
- 25 g of cocoa
- 1 essence of rum
- 1 essence of vanilla
- 3 egg yolks for brushing the dough
Instructions:
1. Preparing the ingredients: Take the ingredients out of the fridge about 1-2 hours before preparation so they reach room temperature. This step is essential to activate the yeast and achieve a fluffy dough.
2. Activating the yeast: In a small bowl, mix 200 g of flour with 100 ml of warm milk and 50 g of fresh yeast. Let the mixture rise for 15-20 minutes until bubbles form on the surface.
3. Preparing the dough: In a large bowl, combine the remaining flour (800 g), salt, sugar, egg yolks, oil, melted butter, and activated yeast. Add the remaining milk and the flavors (lemon zest, orange zest, rum, and vanilla essences).
4. Kneading the dough: Knead the dough for 10-15 minutes until it becomes elastic and smooth. If it is too sticky, you can add a little flour. Cover it with a clean towel and let it rise in a warm place for 1 hour or until it doubles in volume.
5. Preparing the cream: In another bowl, beat the egg whites until stiff peaks form, then gradually add the sugar, continuing to beat until you obtain a glossy meringue. Incorporate the ground walnuts, coconut, raisins (previously hydrated in brandy), cocoa, rum, and vanilla essences. Gently mix to avoid losing the air in the mixture.
6. Assembling the roll: After the dough has risen, divide it into two or three parts. Roll each part on a floured surface into a rectangle. Spread the filling evenly on each piece of dough, then roll tightly. Place the rolls in loaf pans lined with parchment paper.
7. Second rising: Let the rolls rise again for 30 minutes, covered with a towel. Meanwhile, preheat the oven to 180°C.
8. Baking: Brush the rolls with beaten egg yolks and bake them in the preheated oven for 50-60 minutes, or until golden and passing the toothpick test. If they brown too quickly, cover them with aluminum foil.
9. Cooling: After they are done, let them cool in the pans for 10 minutes, then remove them and let them cool completely on a rack.
