- 200 ml milk
- 1 bunch of fresh parsley
- 1 bunch of fresh dill
- 1 teaspoon of salt
- 1/2 teaspoon of ground black pepper
- 1 tablespoon of olive oil
Preparation:
1. Start by cleaning the liver and gizzards, making sure to remove any impurities. After cleaning, rinse them well under cold running water.
2. Boil the liver and gizzards in salted water for 15 minutes. This step is essential to give them a tender texture. After boiling, drain the water and let them cool.
3. Meanwhile, finely chop the onions and garlic cloves. You can sauté them in a pan with olive oil until they become golden and tender, about 5-7 minutes. This will add a rich flavor to your haggis.
4. In a large bowl, beat the 5 eggs. Add the warm milk (which will soften the bread) and incorporate the bread torn into small pieces. Let it soak for a few minutes.
5. Add the finely chopped meat (turkey breast, liver, and gizzards), the sautéed onion and garlic, chopped parsley, and dill to the bowl. Season with salt and pepper to taste. Mix well until all ingredients are evenly combined.
6. Preheat the oven to 180°C (350°F). Prepare a loaf pan that you can line with parchment paper or grease with a little oil.
7. Pour the meat mixture into the pan and level the surface with a spatula. You can add a few slices of boiled egg on top for a more attractive appearance.
