Stew with Two Types of Meat
The meat is washed well under a jet of cold water, and then carefully cleaned of any traces of fat or membranes. It is important to cut the meat into small pieces, being careful not to mix chicken with beef, as they have different cooking times. Beef should preferably be left in cold water for about two hours to remove excess blood, which will contribute to a cleaner flavor of the final dish. After this time, the beef is placed in a deep pot with a splash of oil to start the frying process. Similarly, the chicken will require a separate pot, where the same amount of oil, about 100 ml, will be added to avoid sticking.
When the chicken is half-fried, a julienned onion is added, which will add flavor and sweetness to the dish. In another vessel, the mushrooms are cut into suitable pieces; personally, I cut them into quarters, considering their size. They are sautéed together with the onion until they become slightly golden. Once a pleasant texture is achieved, it is time to add enough water to cover the ingredients.
Once the chicken and onion have infused, the oil from the pot is drained, and the meat is added over the mushrooms. After that, the same is done with the beef. It is essential to season the mixture with finely chopped dill to enhance the flavors. We let the stew simmer on low heat for 5-10 minutes, allowing the ingredients to combine harmoniously.
Meanwhile, we prepare a mayonnaise from 3 eggs, beating them well until a creamy consistency is obtained. Once the stew is ready, it is transferred to clay or yena bowls, covering each portion with a thin layer of mayonnaise. These bowls are placed in the oven at a moderate heat, where they will bake until the mayonnaise is nicely browned, bringing a delicious note of golden crust. The final dish will not only be a hearty dinner but also an extraordinary culinary experience that will delight any table. Serve it hot, alongside a fresh salad or a side of mashed potatoes, which will perfectly complement the rich flavors of the stew. Enjoy your meal!
