Sour cherry and strawberry ice cream

Sour cherry and strawberry ice cream comes together in a food processor with frozen fruit, whipping cream and honey, no ice cream maker needed. I keep the fruit in the freezer until just before blending; it’s soft enough to serve straight away, and after 2-3 hours in the freezer it holds its shape better in a bowl. Preparation: 10 minutes. Cooking: 0 minutes. Chilling: 2-3 hours (optional). Total time: 10 minutes or 2 hours and 10 minutes to 3 hours and 10 minutes. Servings: 6. Approximately 360 kcal and 3 g protein per serving.
Ingredients
- 300 g frozen pitted sour cherries
- 250 g frozen strawberries
- 3 tablespoons honey
- 500 ml whipping cream
Preparation
1. Put 300 g frozen pitted sour cherries, 250 g frozen strawberries, 3 tablespoons honey and 500 ml whipping cream in a food processor. Blend for about 10 minutes in total, stopping the processor from time to time and stirring until the fruit is broken down. 2. Divide the mixture between two lidded plastic containers. Serve straight away or freeze for 2-3 hours, until firm.
Notes
If making it ahead, keep it in the lidded containers and leave them closed between servings, as it easily picks up freezer odors. Spoon it into small bowls and top with a few fresh strawberries. The cream contains dairy; for a dairy-free version, use 500 ml plant-based whipping cream, though the texture may be different. The sour cherries need to be pitted, and if you freeze them yourself, spread them out on a tray before transferring them to a bag so they don’t freeze into a solid block. Large strawberries may need a few extra stops to break down. The mixture may stay soft if the fruit has started to thaw; leave it in the freezer until firm. I don’t rush to turn the food processor back on after every stop: first I check whether any pieces are stuck to the sides of the bowl.
Frequently asked questions
Can I use fresh fruit?
Yes. Freeze it separately for at least 4 hours, until firm, then use the same amounts as listed.
Can I replace the sour cherries with sweet cherries?
Yes, use 300 g, pitted. Sweet cherries are usually sweeter, so start with 2 tablespoons of honey.
What should I do if the ice cream has become too firm?
Leave it on the kitchen counter for 10 minutes before serving, then scoop it with a spoon.
Do I need to whip the cream before adding it to the food processor?
No, use it in liquid form and pour it straight over the fruit; don’t whip it separately.
