Puff pastry rose dessert with sour cherry jam

Puff pastry rose dessert with sour cherry jam is made from rectangles of puff pastry, with jam on one side and a flower pattern on the other. The pastry comes out golden, with the petals visible, and travels well to a picnic. I like it warm, with tea, while the jam is still a little runny. Preparation: 15 minutes. Baking: 25 minutes. Resting: 30 minutes. Total time: 70 minutes. Servings: 4. About 430 kcal and 8 g protein per serving.
Ingredients
- 400 g puff pastry
- 120 g sour cherry jam
- 1 egg
- 20 g icing sugar
Preparation
1. Leave the dough to thaw at room temperature, about 30 minutes, until it can be unfolded without tearing. 2. Unfold the dough and cut it into rectangles. 3. Put sour cherry jam on one half of each rectangle, but not too much, or it runs off onto the tray. 4. On the other half, press lightly with a small pastry cutter shaped like a flower, just enough to leave the imprint of one petal. Then score around the edge, until the rose shape comes out. 5. Brush with beaten egg, place on the tray and bake in a preheated oven at 180°C, about 25 minutes, until well browned. 6. If you like, dust with icing sugar before serving.
Notes
Puff pastry contains gluten, so this dessert is not suitable for people who avoid gluten. The sour cherry jam can be replaced with apricot jam, in the same amount. Line the tray with baking paper and leave a finger's width between the roses, as the dough puffs in the oven. Leftovers keep in the fridge for up to 3 days, in a closed container. They go well with black tea, served warm.
Frequently asked questions
Can I use homemade puff pastry instead of the store-bought one?
Yes, but homemade dough must be very cold when you cut it, otherwise it won't hold the rose shape. If you made it the day before, leave it in the fridge for at least an hour before cutting.
What do I do if the jam runs onto the tray?
Use less jam, just enough to cover one half, and let the roses cool a little on the tray before lifting them off.
How do I make jam from fresh cherries?
Cook pitted cherries with sugar until they thicken, about 15 minutes, and let them cool before placing them on the dough.
Can I put the roses in the fridge before baking?
They can wait covered in the fridge for up to 30 minutes, but no longer, so the dough doesn't harden too much.
What can I brush them with if I don't have an egg?
You can brush them with 1 tablespoon of milk, but the crust will be paler and without shine.
