Dessert muffins with cream and chocolate for a picnic

Dessert muffins with cream and chocolate for a picnic, with cocoa, chocolate chips and orange extract. I used liquid cream instead of milk and they came out very good: fluffy, with chunks of chocolate inside. I take them to the picnic in a box with a lid, not in a basket, so they don't get squashed. Prep: 20 minutes. Cooking: 30 minutes. Total time: 50 minutes. Servings: 12. About 320 kcal and 6 g protein per serving.
Ingredients
- 3 eggs
- 100 g sugar
- 1/4 teaspoon salt
- 100 ml oil
- 200 ml liquid cream
- 200 g flour
- 100 g cocoa powder
- 1 teaspoon baking powder
- 100 g chocolate chips
- 1 teaspoon orange extract
- 1 packet vanilla sugar (8 g)
Preparation
1. Heat the oven to 180°C. 2. Beat the eggs with the sugar (100 g) and 1/4 teaspoon of salt until frothy and lighter in color. 3. Keep beating and slowly pour in the oil (100 ml), then add the liquid cream (200 ml) and mix well. 4. In a bowl, mix the flour (200 g), baking powder (1 teaspoon) and cocoa (100 g), then add them to the egg mixture. 5. Add the chocolate chips (100 g) and the orange extract (1 teaspoon) and mix well. 6. Divide the batter into muffin tins and put them in the hot oven for 25-30 minutes, until they rise and firm up on top. 7. Before serving, dust them with the vanilla sugar (1 packet).
Notes
For dairy-free, you can use 200 ml unsweetened oat milk instead of the cream. They contain gluten, eggs and dairy. The muffins keep in a closed container for up to 3 days. The batter is similar to negresa (a Romanian chocolate cake) but softer and runnier. Fill the tins three quarters full, otherwise the batter spills over the edges. If the tins are bigger than usual, the muffins take longer, and the ones on the edges brown faster than the ones in the middle. With a tea or a glass of cold milk they go well on a picnic.
Frequently asked questions
What do I do if the muffins stick to the tins?
Put paper cases in the tins or grease them with a brush and 1 teaspoon of oil, enough for 12 tins.
Can I use dark chocolate instead of chips?
Yes, 100 g of dark chocolate chopped into pieces the size of a pea works just as well.
What can I use instead of orange extract?
One teaspoon of grated orange zest, added at the same time as the chocolate chips.
