Crepes with caramelized apples

Crepes with caramelized apples are served warm, usually for dessert, with a soft, slightly syrupy filling. The apples soften in a small saucepan with sugar and cinnamon, while the thin crepes hold them without covering them. Ever since I saw Any’s version, I haven’t stopped thinking about them; I cut the apples into small cubes and really like them that way. Prep: 10 minutes. Cook: 20 minutes. Total time: 30 minutes. Servings: 5. Approximately 255 kcal and 6 g of protein per serving.
Ingredients
For the crepes
- 1 egg
- 125 g flour
- 250 ml milk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon rum extract
- 8 g vanilla sugar
- 15 ml oil
For the filling
- 3 medium apples (450 g)
- 50 g sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
Preparation
1. Mix the egg with the flour, milk, vanilla extract, rum extract, vanilla sugar and oil until you have a smooth batter. 2. Heat a pan and pour in the batter in thin portions. Cook 5 crepes, 2 minutes each, turning them halfway through; the edges loosen and turn lightly golden. 3. Peel and core the apples, then cut them into cubes. Put them in a small saucepan with the sugar, cinnamon and vanilla extract. Cook for 10 minutes, stirring; the apples soften and release a fragrant syrup. 4. Fill each crepe with apples and serve immediately.
Notes
Firm, slightly tart apples hold their shape as cubes; if they’re very ripe and juicy, the filling will be softer. I serve them with plain yogurt, stacked one on top of another like pancakes with jam. The crepes and filling can be stored separately in the fridge for up to 3 days; warm the apples before filling the crepes. For a dairy-free version, replace the milk with 250 ml unsweetened soy drink. The batter contains gluten and eggs, and the standard version also contains milk.
Frequently asked questions
Can I use grated apples?
Yes. Coarsely grate the 3 apples and cook for 8 minutes, stirring often, until softened.
What should I do if the filling releases too much juice?
Remove the apples with a spoon and let the liquid boil for another 2 minutes, then put only as much filling as will fit into the crepes.
What can I use instead of vanilla sugar?
Use 1 teaspoon of sugar and 1/4 teaspoon of vanilla extract instead of the packet.
