Preparation:
1. Start by preparing the oven. Preheat it to 180 degrees Celsius and prepare a muffin tray, greasing it with a little oil or using paper muffin cups.
2. Separate the egg whites from the yolks. In a bowl, beat the egg whites with a pinch of salt until frothy. Gradually add half of the sugar (65 g) and continue mixing until you achieve a firm and glossy meringue. This step is essential to ensure a fluffy texture for the muffins.
3. In another bowl, mix the yolks with the remaining sugar (65 g) and the two packets of vanilla sugar. Continue mixing until the mixture becomes creamy and light in color.
4. Add the oil and milk to the yolk mixture, mixing gently. Then, incorporate the grated lemon zest to add a fresh and fragrant note.
5. Fold the sifted flour together with the baking powder into the yolk mixture, mixing with a spatula. It is important not to overmix to avoid developing gluten and ending up with dense muffins.
6. Then, add the meringue to the yolk mixture in 2-3 stages, gently folding from the bottom up to retain the air in the egg whites. This will ensure a light and fluffy texture.
