Apricot jam sandwich cookies

Apricot jam sandwich cookies are sandwiched in pairs for the holiday platter; the yogurt and vanilla cookies have lightly crisp edges and a fluffy center. I choose apricot jam and serve them once they have cooled, with a thin layer of filling, just enough so it doesn’t ooze out between the halves when I lift them off the platter. Prep: 25 minutes. Cook: 30 minutes. Rest: 20 minutes. Total time: 75 minutes. Servings: 30. Approximately 100 kcal and 2 g protein per serving.
Ingredients
- 80 g butter at room temperature
- 150 g sugar
- 1 packet vanilla sugar (8 g)
- 280 g flour
- 10 g baking powder
- 1/8 teaspoon salt
- 1 medium egg
- 125 ml Greek yogurt
- 50 ml milk
- 1 vial vanilla essence (2 ml)
- 200 g apricot jam
Preparation
1. Beat the butter with the sugar and vanilla sugar for 3 minutes, until creamy. 2. In a bowl, mix the flour with the baking powder and salt. In another bowl, beat the egg with the yogurt, milk and vanilla essence. 3. Alternately mix the flour mixture and the yogurt mixture into the butter until you have a smooth dough. 4. Put the dough in a piping bag and pipe 5 cm circles onto a silicone mat or a baking sheet lined with parchment paper, leaving space between them. 5. Bake at 180°C for about 10 minutes per batch, until the edges are lightly browned. For 60 halves, bake in three batches. 6. Leave the halves to cool for 20 minutes, then sandwich them in pairs with apricot jam.
Notes
Store in a closed container in the refrigerator for up to 3 days; the jam gradually softens the cookies. For another filling, use 200 g of thick jam, not a watery one. They contain gluten, dairy and egg. Serve with black tea. Circles smaller than 5 cm bake faster, so check them after 8 minutes. Watery jam can run out at the join, so choose one that is well set.
Frequently asked questions
Can I use regular yogurt?
Yes, use 125 g of thick plain yogurt; if it is watery, leave it to drain for 20 minutes first.
How do I add the jam without it oozing out between the halves?
Place about 1 teaspoon of jam in the center of each half and gently sandwich them together.
Can I replace the vanilla essence?
Yes, use the finely grated zest of 1 lemon instead of the essence.
