To create a delicious cheesecake with orange jelly, we start by preparing the base. In a large bowl, we mix softened butter with sugar until it becomes a fluffy cream. In this mixture, we add one egg yolk at a time, ensuring each yolk is fully incorporated before adding the next. This step is essential for achieving an airy texture.

Once we finish adding the yolks, we slowly integrate the flour mixed with baking powder. It is important to mix well but carefully, so as not to develop the gluten in the flour, which could make the base dense. In another container, we beat the egg whites with a pinch of salt until we get a firm foam, which will help the layers rise during baking.

After the egg whites are ready, we use a spatula to gently fold them into our batter. This folding technique ensures that the base will be light and fluffy. Once we have a uniform mixture, we pour the batter into a baking pan lined with parchment paper and bake it in a preheated oven at 180 degrees for 20-25 minutes, or until it turns golden and firm to the touch. After the base is baked, we let it cool completely, then cut it in half.

Meanwhile, we prepare the cream cheese. We mix the sweet cheese with sugar until it becomes creamy, then add the mascarpone cream, which will bring a note of finesse and richness. We hydrate the gelatin according to the instructions on the package, then melt it in warm orange juice. After it has cooled slightly, we add the gelatin to the cheese mixture and mix well to ensure it is evenly distributed.

We place the cream cheese over one of the layers, and place the other layer on top, creating a rich layered cake. We put the cake in the fridge to set.

Now, we dedicate ourselves to preparing the orange curd. The gelatin is soaked, and the orange juice is gently heated. In a bowl, we beat the yolks with sugar until they become pale, then we add the cornstarch. When the orange juice is hot but not boiling, we pour in the yolk mixture and stir continuously until it begins to thicken. After removing from heat, we add the butter and stir until smooth, followed by the gelatin. We let the cream cool for 20 minutes.

Once the cream has cooled, we take the cake out of the fridge and carefully trim the edges for a uniform appearance. We place the cake back in the baking pan, ensuring the edges are well defined. We pour the orange curd on top and let the cake chill for at least 4 hours to allow the jelly to set.

Finally, we decorate the cake with whipped cream and chocolate ornaments, giving it an attractive appearance. We serve it with joy, savoring every bite of this refined dessert. Enjoy!
