Peaches with chocolate cream and nuts
To prepare these delicious cookies, also known as peaches, we will start by ensuring that all the ingredients are at room temperature, so we can enjoy a homogeneous and well-bound dough. In a large bowl, we will add the eggs, which we will mix with the sugar until the mixture becomes frothy and pale. This is the stage where the sugar will dissolve completely, and the eggs will take on an airy texture.
Once we have a homogeneous mixture, we will add the milk, which will bring moisture to our dough. Next is the Rama Maestro margarine, which should be cut into small cubes to integrate more easily into the mixture. Then, we add the vanilla essence and grated lemon zest, which will provide a subtle fragrance and a fresh flavor to the cookies. Finally, carefully fold in the flour mixed with baking powder, being careful not to form lumps.
After obtaining a smooth and suitably firm dough, we will shape balls the size of a walnut. These balls will be carefully placed on a baking tray, leaving enough space between them to spread while baking. The oven should be preheated to 180 degrees Celsius, and the cookies will bake for about 10 minutes until they become golden and fluffy.
While the cookies are baking, we will prepare the chocolate and nut cream. In the bowl of the food processor, we will add the nuts, which we will mix until they are ground, but not too fine. Over them, we add the margarine, also cut into cubes, powdered sugar, cocoa, rum essence, and melted chocolate. We mix everything until we obtain a homogeneous and delicious cream.
Once the cookies have cooled, we will scoop them out using a teaspoon, an activity that will remind us of childhood and the joy of savoring these delights. After scooping them out, we fill each cookie with the chocolate and nut cream, and then we stick two together.
To give them an even more attractive appearance, the peaches will be dipped in a mixture of colored milk and granulated sugar. This step will give them a shiny and appetizing finish. Finally, it is recommended to refrigerate them for 1-2 hours to allow the sugar to harden and to enjoy perfectly decorated cookies. These peaches will surely become the stars of any sweet table!
