We wash the apples with cold water, making sure they are free from any impurities. We cut them into quarters, remove the core, and carefully eliminate the seeds so they do not spoil our taste pleasure. Each quarter is then cut into three smaller pieces, resulting in small cubes that will add a pleasant texture to the cake.

In a large bowl, we beat the eggs with the 80 grams of sugar using a mixer on medium speed until the mixture becomes frothy and light in color. Then, we add the melted and cooled butter (50 grams), continuously mixing to incorporate all the ingredients. The grated lemon peel will bring a fresh and invigorating aroma, so do not hesitate to add it to the mixture.

In another bowl, we combine the flour with the baking powder, then gradually incorporate this mixture into the egg and sugar composition. We continue to mix, adding the milk with a spoon to achieve a soft dough, resembling the consistency of milk semolina intended for a baby bottle. This dough will be the base of our cake.

We prepare the baking tray: we grease it with a little room temperature butter, ensuring it is evenly covered, then sprinkle breadcrumbs on the bottom of the tray to prevent the cake from sticking. We pour the dough into the tray and carefully spread it to be even across the surface.

The apple cubes are carefully placed on top of the dough, making sure to distribute them to cover the entire surface. We place small pieces of butter here and there, to provide a delicious aroma and added moisture, and sprinkle two tablespoons of granulated sugar over the apples, which will caramelize during baking.

We preheat the oven to 200°C and bake the cake for about 45 minutes. It is important to check the cake from time to time to ensure it is baking evenly. When ready, the cake will have a golden crust and an enticing aroma of apples and vanilla. We let it cool slightly before cutting it into generous portions. This apple cake is perfect to be served warm, alongside a scoop of ice cream or a splash of whipped cream. It will surely please everyone!
